OUR MATCHA

Matcha is a finely ground Japanese green tea made from shade-grown leaves, slowly stone-ground to preserve their full character.

Unlike infused teas, the entire leaf is consumed, offering a richer, more intense, and more complete experience.

Our matcha reveals unique and complex aromatic profiles, each cultivar expressing the richness of its terroir with precision.

Gokou offers delicate notes of fresh greens, nori, and jasmine, resulting in a refined and elegant cup.

Saemidori reveals more indulgent notes of toasted barley, nuts, and cream, with a rounder, more enveloping texture.

Matcha is naturally rich in antioxidants and L-theanine, an amino acid known to promote steady energy and calm, focused clarity.

It offers an alternative to coffee, without sudden spikes or energy crashes.

Our matcha is selected in Japan from family-run farms renowned for their craftsmanship.

Each one is chosen with care to ensure consistent quality, full traceability, and a true expression of the cultivar and its terroir.

Our matcha is crafted to offer a pure and faithful expression of taste.

Unlike most matcha, often made from standardized blends, we select only single cultivars, allowing the terroir and the farmer’s work to be fully expressed.

Each matcha is sourced from traceable Japanese farms, harvested in spring and slowly stone-ground to preserve its aromatic richness.

The result is a more balanced matcha, free from bitterness, and naturally rich in umami.

The price reflects a commitment to quality at every step.

Our matcha is made from the first spring harvest, shade-grown, produced in limited quantities, and slowly stone-ground, a meticulous and time-intensive process.

Working with single cultivars and family-run farms also involves more rigorous selection and smaller volumes.

We prioritize product quality and respect for craftsmanship over mass production.

Store your matcha in a cool, dry place, away from light, in an airtight container.

Once opened, we recommend enjoying it within 4 weeks to preserve its freshness, vibrant color, and aromatic depth.

We tested over 60 samples to select only exceptional matcha.

Each selection follows strict criteria: single cultivar (non-blended), vibrant green color, authentic taste, stone-ground milling, and Japanese farm origin.

PREPARATION

The ideal temperature is between 70-80°C. Boiling water can burn the matcha and alter its taste.

Use 1 to 2 teaspoons of matcha according to your preference. Start with 1 teaspoon and adjust to taste.

Whisk briskly in an “M” or “W” motion using a chasen, without pressing on the bottom of the bowl. The goal is to achieve a fine, light, and even foam.

Yes, you can prepare a matcha latte by replacing the water with hot milk. Start by whisking the matcha with a small amount of hot water, then add the milk. You can also add ice to enjoy it cold.
